
PASTA MEAT SAUCE, ITALIAN GARDEN SALAD BREAD & OLIVE OIL HERB BREAD DIP
Italian Garden Salad
10 ounce bag Italian Salad Mix
¼ cup Red Onions, sliced paper-thin
6 -12 pitted Black Olives
6 Pepperoncini Peppers
2 Roma Tomato, sliced
½ cup crouton
Italian dressing of your choice
In a bowl, toss together the salad mix, onion slices, olives, pepperoncini, tomatoes, and croutons. Add dressing when ready to serve.
Bread & Olive Oil Herb Bread Dip
1/4 cup good quality extra-virgin olive oil
4-5 cloves garlic, crushed and minced
2 tablespoons Italian Seasoning
1/8 cup fresh parmesan cheese, finely grated
1/4 cup balsamic vinegar
Salt & Pepper to taste
crusty bread, for dipping
Pour the olive oil into a small pan. Set over medium-low heat.
Add the minced garlic. Heat the oil and garlic until it has warmed, 3-5 minutes then pour the oil onto a serving plate. Immediately sprinkle with oregano, parmesan, balsamic vinegar, salt and black pepper. Serve with crusty bread!
Meat Sauce
½ pound Ground Beef
2-4 Italian Link Sausage
2 tablespoons Butter
2 tablespoons Olive Oil
1 cup Portabella Mushrooms, chopped
4 cloves Garlic, minced
½ cup Yellow Onions, finely diced
¼ cup Sweet Peppers, finely diced
¼ cup Poblano Pepper, finely diced
14.5 ounces Italian Style Diced Tomatoes
8 ounces Tomato Sauce
6 ounces Tomato Paste
8 ounces Beef Broth
8 ounces White Wine
¼ cup Parmesan Cheese
2 tablespoons Light Brown Sugar
1 ½ teaspoons Salt
½ teaspoon Black Pepper
2 teaspoons Dried Basil
2 teaspoons Italian Seasoning
½ teaspoon Fennel Seeds
½ teaspoon Smoked Paprika
½ teaspoon Crushed Red Pepper Flakes
In a dutch oven, heat the olive oil over medium heat. Add the onions, peppers and garlic. Cook for about 3-5 minutes. Then add the ground beef, blending meat with vegetables, cooking until meat is no longer pink. Once meat is browned. Drain, oil and juices off of meat mixture. Then pour in diced tomatoes, tomato sauce, tomato paste, beef broth and white wine. Once sauce begins to boil, reduce heat to low and stir in parmesan cheese, brown sugar, salt, pepper, dried basil, Italian seasoning, fennel seeds, smoked paprika and red pepper flakes. Simmer for 1 hour stirring occasionally. Meantime, cook your Italian sausage as directed by package. Once sauce is al dente, whisk in butter and serve over your favorite pasta and Italian sausage. For additional flavor, top with parmesan cheese and crushed red peppers.
