Blackened Salmon w/ Guacamole & Fiesta Corn

Blackened Salmon

2 pieces Fresh Salmon

1 tablespoon Canola Oil

4 teaspoons Blackened Seasoning

(you can purchase blackened seasoning or try my recipe listed) 

  1. Heat the oil in a cast iron skillet over medium-high heat.
  2. Season the salmon with blackened seasoning and add to skillet.
  3. Cook until deeply golden brown to blackened on bottom.
  4. Flip salmon and cook other side until done.

 

Guacamole

1 Avocado, mashed

1 Tomato, diced

1 Tomatillo, diced

1 Jalapeño Pepper. diced

1 tablespoon Onions, chopped

1 tablespoon Cilantro, chopped

1 Garlic Clove, minced

1 teaspoon Lemon Juice

Salt to Taste

 

Mix ingredients together and serve on top of salmon.

Also delicious as a snack with tortilla chips!

 

Fiesta Corn

1 cup Canned Corn

2 teaspoons Canola Oil

1 tablespoon Onions, chopped

½ tablespoon Red Bell Pepper, chopped

½ tablespoon Green Bell Pepper, chopped

1 Garlic Clove, minced

Salt to Taste

 

  1. Heat oil in a large skillet over medium high heat.
  2. Add corn, onions, bell peppers and garlic to heated skillet.
  3. Cook until corn begins to char ( 2-3 minutes).
  4. Toss corn and repeat cooking until corn is charred on all sides.
  5. Add salt to taste and serve immediately with salmon and guac!

 

 

Blackened Seasoning

1 tablespoon smoke paprika

½  tablespoon sweet paprika

2 teaspoons kosher salt

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon ground cayenne pepper

½ teaspoon white pepper

½ teaspoon black pepper

1/2 teaspoon parsley

½ teaspoon dried oregano

Mix ingredients together and your seasoning is ready to enjoy on fish or poultry.
