Baked Chicken Breast, Wild Rice & Green Beans

Baked Chicken Breast

 2 chicken breasts

2 teaspoons Olive Oil

Poultry Seasoning:

¾ teaspoon sea salt

½ teaspoon dried basil

½ teaspoon dried oregano

½ teaspoon dry minced garlic

½ teaspoon dry minced onion

½ teaspoon dry mustard powder

½ teaspoon smoked paprika

½ teaspoon ground black pepper

¼ teaspoon cayenne pepper

  • Preheat oven to 425 degrees.
  • Drizzle chicken with olive oil and sprinkle with seasoning.

(make sure you season both sides)

  • Bake 17-20 minutes or internal temperature is 165F.

 

Wild Rice

 1 cup wild rice blend

2 cups chicken broth

(check rice package for rice to liquid ratio)

1 tablespoon butter

½ cup Onions, chopped

1 Garlic, minced

½ cup Sweet Multicolored Peppers, chopped

  • In a sauce pan, melt butter over middle high heat.
  • Add onions, peppers and garlic and sauté for 5-7 minutes.
  • Add chicken broth and rice to pot and bring mixture to a boil.
  • Reduce heat to low, cover and simmer.
  • Cook for 45 minutes or until rice is tender and liquid absorbed.

 

Green Beans

 12 ounces Fresh Green Beans, cut in half

1 small Onion, sliced

Smoked Meat pieces (ham or bacon)

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon seasoning salt

ground black pepper to taste

1 cup Chicken Stock

  • In a pot add smoked meat and heat for about 5 minutes.

(pork produces its own grease but you may need to add some oil)

  • Add onions, green beans and seasonings; cover and cook on low.
  • Simmer for 30 minutes or until the beans are very tender.
