Broccoli Cheddar Soup

Ingredients:

– 1 TBSP butter
– 1 medium yellow onion
-1/4 cup flour
-2 cups chicken broth
-2 cups half and half
-2 cups of cheddar cheese
-12 oz broccoli
-2 carrots
-1/4 tsp dry mustard (1/2 tsp reg mustard)
-salt
-paprika
-garlic powder
– black pepper

Recipe:

Add 1 Tbsp butter to stock pot & heat over low/med heat. Add chopped onion, saute until onions are soft and translucent, about 2-3 minutes.

Add flour to 1/4 cup of water and whisk. Then add mixture to pot and whisk to blend.

Pour in chicken broth, whisking as you pour.

Add half and half; pour slowly and whisk.

Continue to whisk for 2-3 minutes to blend.

Add grated cheddar cheese a handful at a time, stirring slowly so cheese melts in soup.

Add broccoli and carrots; stir to combine.

Stir in seasonings; paprika, garlic powder, dry mustard, salt and pepper, Reduce heat and simmer about 20-25 minutes or until thickened and broccoli/carrots are tender.

If the soup gets too thick, add 1 TBL of chicken broth to loosen it up.

Serve hot in a bread bowl or regular bowl.
