Nearly 10 years ago, around Mother’s Day I spent the weekend with my sister-in-love to assist with her first tea party. It was a wonderful weekend filled with love and laughs, shopping, decorating and cooking brunch style dishes. Scotch Eggs were one of the menu items and I was in charge of boiling and deshelling the eggs. At the time I had never heard of Scotch Eggs but I was intrigued about the techniques of the cooking process which included us deep frying them until golden brown.

Since then, I always wanted to prepare those delicious eggs for my family. When I really ponder on it now, I find it odd that it has taken me nearly a decade to make them. Now that we have hens laying daily I have been on the prowl looking for new recipes and meal ideas incorporating eggs. This is a simple, quick and tasty recipe!
What you’ll need:
Hard Boiled Eggs (farm fresh)
Ground Pork Sausage (Jimmy Dean)
Eggs (farm fresh)
Flour, All Purpose (Pillsbury)
Bread Crumbs (Progresso)



Preparations:
Hard boil your eggs then deshell.
Wrap each hard boiled egg in sausage.
In 3 separate bowls add your eggs, flour and bread crumbs.
Dredge wrapped eggs into the flour, then eggs and finally bread crumbs.


Cook in the Air fryer!
Spray the air fryer basket with cooking spray.
Set air fryer at 350 degrees for 12 minutes.
Place eggs in air fryer basket without overcrowding.
After 6 minutes turn eggs over and cook remaining 6 minutes.
