Deep Fried Cornish Hen

During the holidays our family enjoys my brother frying turkeys. He has done it for years and the tradition was passed down from my father who was the original turkey fryer in the family. Although I am not a fan of fried turkey meat; even with marinade injections I do not like the dryness of the turkey breast,  but my brother always saves the turkey wings for me each year. Now turkey wings are a different story for me! I love them baked, stewed, barbecued even fried. As a matter of fact, my brother decided to fry 50 lbs of turkey wings for our holiday festivities this past year and everyone loved them.

BUT BACK TO THE CORNISH HEN…

It was last week when my husband and I started talking about having a “Cooking in the Kitchen Day” which is when we create a meal plan, research recipes and/or dish ideas, go grocery shopping for ingredients then cook together as co-chefs. It has become one of our favorite home activities and I  love sharing our recipes with you. After watching a few episodes of the hilarious Chef Ted Bourque’ we decided to fry Cornish Hens and was executed with great success. Below is our version of his recipe.

 

Ingredients:

  • Stock Pot
  • 2 Cornish Hens
  • Vegetable Oil

Seasonings:

  • Cajun Seasoning
  • Garlic Powder
  • Onion Powder
  • Cayenne Pepper
  • Smoked Paprika
  • Yellow Mustard
  • Marinade Injection

I created my own marinade. Equal parts of melted butter & Texas Pete Hot Sauce

  1. Fill stockpot halfway with vegetable oil. The oil will rise once you add hen so DO NOT overfill stockpot or you may run into a problem.
  2. Clean hens and completely dry them inside and out before seasoning.
  3. Season hens with dry seasonings, inject breast only with marinade then coat with yellow mustard.
  4. Allow hens to sit for up to an hour before frying. This will help the flavors marinate.
  5. Heat oil to 365 degrees F and carefully put 1 Cornish Hen in the pot at a time.
  6. Cook for 15 minutes or until golden brown. Internal cooking temp is 165 degrees F.

We ate our fried cornish hens with Zatarain’s Red Beans and Rice.
